I have been public speaking and educating for over 20 years. In high school and college, I was a mentor and teacher to other younger students and children in difficult situations. I have taught in all primary school levels and taught Special Education at the Middle School level. I have created and taught educational carts at the North Carolina Museum of Natural Sciences and most recently created a class that is being taught at a local farm by my children and another child to other children in the area about the many aspects of nutrition. This class has 3 segments that break down different colors on your plate, how to read ingredients and what they mean, and a guided tour through the farm where the children get to pick and eat fruits and vegetables right off the vine as they discuss them. I have been speaking to and mentoring others for quite some time about the importance of work/life balance and proper nutrition. I not only speak about these things but live them, wholeheartedly. While I was in Grad school full time, I was a single parent of 2 elementary aged children (and still am because they’re not going anywhere!) and held down 9 part time jobs, while still having a small social life and about 5-7 hours of sleep a night. When it comes to balance and organization, I’m an expert! These are areas that I am extremely passionate about and love nothing more than to pass on the knowledge, joy and love.
